Indulge in the iconic Swiss Rösti Recipe , a golden-brown potato delight with a crispy outer layer and a tender inside.
Ingredients:
- 4 large potatoes, peeled and grated
- Salt, to taste
- Pepper, to taste
- 2-3 tablespoons butter or cooking oil
- Optional: chopped fresh herbs (such as parsley or chives)
- Optional: grated cheese (such as Gruyère)
Instructions:
Grate the Potatoes:
Using a box grater or a food processor, grate the peeled potatoes into a bowl. You can use a medium or coarse grating setting, depending on how you like the texture of your Rösti.
Squeeze Out Excess Moisture:
Place the grated potatoes in a clean kitchen towel or a cheesecloth and squeeze out as much moisture as possible. This will help the Rösti become crispy when cooked.
Season the Potatoes:
Transfer the squeezed potatoes to a mixing bowl. Season with salt and pepper according to your taste. If you’re using any chopped herbs or grated cheese, you can add them at this stage.
Heat a Skillet:
In a non-stick skillet, melt the butter or heat the cooking oil over medium heat. The size of the skillet will determine the size of your Rösti. You can make one large Rösti or several smaller ones.
Shape the Rösti:
Once the butter is melted or the oil is heated, spread the grated potatoes evenly in the skillet, pressing them down gently with a spatula. The layer should be about 1/2 to 3/4 inch thick.
Cook the Rösti:
Let the Rösti cook undisturbed for about 10-15 minutes, or until the bottom is golden brown and crispy. You can occasionally shake the skillet to prevent sticking.
Flip the Rösti:
Once the bottom is cooked, carefully slide the Rösti onto a large plate. Place another plate of the same size over the Rösti and quickly flip the whole thing over. This will allow the uncooked side to be on the bottom in the skillet.
Cook the Other Side:
Slide the Rösti back into the skillet and cook for another 10-15 minutes until the second side is golden brown and crispy as well.
Serve:
Once both sides are crispy and the inside is cooked through, slide the Rösti onto a serving plate. Cut it into wedges and serve it hot as a side dish.
