Babaganoush is a delicious Middle Eastern dip made from roasted eggplant, tahini, garlic, lemon juice, and olive oil.
Ingredients:
- 2 medium-sized eggplants
- 2-3 cloves of garlic, minced
- 1/4 cup tahini (sesame paste)
- Juice of 1 lemon (adjust to taste)
- 2 tablespoons extra-virgin olive oil, plus extra for garnish
- Salt and pepper to taste
- Optional garnishes: chopped fresh parsley, paprika, or pomegranate seeds
Instructions:
First, preheat your oven to 375°F (190°C).
Next, wash the eggplants and prick them with a fork in several places. This will prevent them from bursting during roasting. Then, place them on a baking sheet lined with parchment paper.
Now, roast the eggplants in the preheated oven for about 45-60 minutes, or until they are completely tender and the skin is charred. You can also roast them directly over an open flame if you have a gas stove, turning them occasionally until the skin is charred and they are soft.
Once the eggplants are done roasting, remove them from the oven (or flame) and let them cool slightly.
Afterward, peel the skin off the eggplants while they are still warm. This should be easy to do. Discard the skin and place the roasted eggplant flesh in a colander to drain any excess liquid. Allow them to drain for about 15-20 minutes.
In the meantime, in a food processor or blender, combine the roasted eggplant, minced garlic, tahini, lemon juice, and olive oil. Blend until the mixture is smooth and creamy. If it’s too thick, you can add a little water to achieve your desired consistency.
Now, taste the babaganoush and adjust the seasonings by adding salt, pepper, and more lemon juice if needed to suit your taste.
Transfer the babaganoush to a serving bowl. Create a well in the center with the back of a spoon, and drizzle some extra virgin olive oil into the well.
To enhance the presentation, garnish the babaganoush with chopped fresh parsley, a sprinkle of paprika, or a few pomegranate seeds for a pop of color.
Serve
Finally, serve your homemade babaganoush with pita bread, pita chips, fresh vegetables, or as a side dish. Enjoy!
