Ingredients:
For the curry filling:
- 500g (1 lb) boneless chicken, beef, lamb, or vegetables (cut into bite-sized pieces)
- 1 large onion, finely chopped
- 2-3 cloves of garlic, minced
- 1-inch piece of fresh ginger, grated
- 2 tablespoons vegetable oil or ghee
Instructions:
Firstly, heat the oil or ghee in a large pot over medium heat. Next, add the chopped onions and cook until they become translucent. Then, add the minced garlic and grated ginger, and sauté for another minute until fragrant. Now, stir in the curry powder, ground cumin, ground coriander, turmeric, and paprika (if using). Cook for a couple of minutes to allow the spices to release their flavors.
After that, add the meat or vegetables to the pot, and season with salt and pepper. Brown the meat (if using) for a few minutes. Once done, pour in the chopped tomatoes or tomato puree and the chopped green chilies. Mix well and let it simmer for a few minutes.
Pour in the chicken or vegetable broth, bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the curry simmer until the meat is cooked through and tender (or the vegetables are cooked). To add a creamy texture, stir in the coconut milk during the last few minutes of cooking. Remember to adjust the seasoning to taste.
Bunny Chow assembly:
Now, take the round loaf of bread and cut off the top portion. Then, hollow out the inside of the loaf, removing excess bread to create a hollow “bowl” that can hold the curry. Optionally, you can spread some butter on the inside walls of the hollowed-out loaf to add extra richness.
Ladle the prepared curry into the hollowed-out bread loaf, filling it generously with the delicious mixture. Finally, garnish the curry with fresh coriander leaves.
Serving:
Traditionally, Bunny Chow is served as a handheld street food dish. You can eat it by tearing off pieces of the bread bowl and dipping it into the curry. Alternatively, you can use a knife and fork to eat it like a more conventional meal.
