Ingredients:
For the filling:
- 1 lb (450g) ground beef or chicken (you can also use beans or tofu for a vegetarian option)
- 1 medium onion, chopped
- 2-3 cloves of garlic, minced
- 1 bell pepper, diced
- 1 cup cooked rice (white or brown)
- 1 cup black beans (canned or cooked from dry)
- 1 cup corn kernels (canned or frozen)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Olive oil
For assembly:
- Large flour tortillas
- Grated cheese (cheddar, Monterey Jack, or your favorite)
- Sour cream
- Salsa or hot sauce
- Chopped lettuce
- Diced tomatoes
- Sliced avocado
- Fresh cilantro (optional)
- Lime wedges (optional)
Instructions:
- In a large skillet or frying pan, heat a tablespoon of olive oil over medium heat. Add the chopped onion and cook until it becomes translucent, about 2-3 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Add the ground beef or chicken to the pan and cook until it’s browned and fully cooked. If you’re using beans or tofu, you can skip this step and directly add them later.
- Once the meat is cooked, add the diced bell pepper, ground cumin, chili powder, salt, and pepper. Stir everything together and cook for a few minutes until the bell pepper softens.
- Add the cooked rice, black beans, and corn kernels to the pan. Mix all the ingredients well and cook for another 2-3 minutes, allowing the flavors to meld together. Adjust seasonings according to your taste.
- Warm up the flour tortillas either on a hot skillet or in the microwave.
- To assemble the burritos, place a scoop of the filling mixture onto the center of a tortilla. Add some grated cheese, a dollop of sour cream, salsa or hot sauce, chopped lettuce, diced tomatoes, sliced avocado, and fresh cilantro if desired.
- Fold the sides of the tortilla inward and then roll it up tightly, creating a burrito.
- Repeat the process with the remaining tortillas and filling.
- You can serve the burritos as they are, or if you prefer, you can heat them in a hot skillet or on a griddle for a minute on each side to lightly toast and crisp up the tortilla.
- Optionally, serve with lime wedges for squeezing over the burritos for extra tanginess.
