Fajitas de Pollo or chicken fajita is a flavorful Mexican dish consisting of marinated chicken, sautéed onions, and peppers, served with tortillas. Here’s a recipe to make Fajitas de Pollo:
Ingredients:
- 1 pound (450g) boneless, skinless chicken breasts, sliced into thin strips
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 1 large onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 8-10 flour tortillas
- Optional toppings: guacamole, sour cream, shredded cheese, salsa, etc.
Instructions:
- In a bowl, combine the olive oil, lime juice, minced garlic, cumin, chili powder, smoked paprika, dried oregano, salt, and pepper. Stir well to make the marinade.
- Place the sliced chicken in the marinade and toss to coat. Let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
- Heat a large skillet or grill pan over medium-high heat. Add a drizzle of olive oil.
- Add the marinated chicken to the hot skillet and cook for about 6-8 minutes, or until cooked through and slightly browned. Remove the chicken from the skillet and set it aside.
- In the same skillet, add the sliced onions and bell peppers. Sauté them for about 5-6 minutes, or until they are tender and slightly charred.
- Warm the flour tortillas according to package instructions or directly on the stove flame for a few seconds on each side.
- Assemble the fajitas by placing a few strips of cooked chicken on a warm tortilla, followed by sautéed onions and peppers. Fold the tortilla over to enclose the filling.
- Repeat the process with the remaining tortillas and filling.
