Ingredients :
- 1 ½ cups dried chickpeas (soaked overnight)
- 1 small onion, roughly chopped
- 3-4 garlic cloves
- 1 cup fresh parsley leaves
- 1 cup fresh cilantro leaves
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon baking soda
- 1 tablespoon all-purpose flour or chickpea flour
- Salt, to taste
- Black pepper, to taste
- Vegetable oil, for frying
Instructions :
- Soak the dried chickpeas in water overnight. The chickpeas should double in size after soaking.
- Drain the soaked chickpeas and rinse them thoroughly in cold water.
- In a food processor, add the soaked chickpeas, chopped onion, garlic cloves, parsley, cilantro, ground cumin, ground coriander, baking soda, flour, salt, and black pepper.
- Pulse the ingredients until you get a coarse and crumbly mixture. Avoid overprocessing; you want the falafel mixture to have some texture.
- Transfer the falafel mixture to a bowl, cover it, and refrigerate for at least 1 hour. Chilling the mixture will make it easier to shape and help them hold their form during frying.
- After chilling, take the falafel mixture out of the refrigerator. Shape the mixture into small balls or patties, about 1 to 1 ½ inches in diameter.
- In a deep pan or skillet, pour vegetable oil to a depth of about 2 inches and heat it over medium-high heat.
- Once the oil is hot (about 350°F or 180°C), carefully add the falafel balls or patties in batches, being cautious not to overcrowd the pan.
- Fry the falafel until they are golden brown and crispy on the outside, which should take about 3-4 minutes per batch.
- Remove the fried falafel with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
- Serve the falafel while they are still warm. You can enjoy them in pita bread with your favorite toppings, such as tahini sauce, chopped tomatoes, cucumbers, lettuce, and pickles.
