German Doner Kebab is a popular fast-food dish that consists of seasoned meat (usually beef or chicken) cooked on a vertical rotisserie
Ingredients:
Kebab Meat:
- 500g boneless chicken thighs or beef/lamb (thinly sliced)
- 2 cloves of minced garlic
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- 2 tablespoons of vegetable oil
Garlic Sauce:
- 4 tablespoons of mayonnaise
- 2 cloves of minced garlic
- 1 tablespoon of lemon juice
- Salt and black pepper to taste
Assembly:
- Flatbreads or pita bread
- Sliced fresh tomatoes
- Sliced cucumbers
- Sliced red onions
- Shredded lettuce
- Sliced red or green chili peppers (optional, for extra heat)
- Your choice of hot sauce (e.g., Sriracha, chili sauce)
- Tahini sauce (store-bought or homemade)
- Sliced dill pickles (optional)
Instructions:
To begin with, marinate the meat:
- In a bowl, mix the sliced meat with minced garlic, cumin, coriander, smoked paprika, turmeric, cinnamon, cayenne pepper, salt, and black pepper.
- Add 2 tablespoons of vegetable oil to the meat and mix well. Afterward, cover and refrigerate for at least 30 minutes or, better yet, marinate overnight for the best flavor.
Moving on to the garlic sauce:
- In a small bowl, mix together mayonnaise, minced garlic, lemon juice, salt, and black pepper. Adjust the seasoning to your taste. Subsequently, refrigerate until ready to use.
Next, cook the meat:
- Heat a grill pan or skillet over medium-high heat. You can also use an outdoor grill if available.
- Thread the marinated meat onto skewers or cook them directly in the pan. Cook for about 3-5 minutes on each side until the meat is cooked through and has a nice char. Once done, remove from heat.
Now, let’s assemble the German Doner Kebab:
- Warm the flatbreads or pita bread in the oven or on a dry skillet for a minute or so.
- Spread garlic sauce on each flatbread.
- Place the cooked meat on the sauce, followed by tomatoes, cucumbers, onions, lettuce, and chili peppers if desired.
- Drizzle with hot sauce and tahini sauce to taste. Additionally, add sliced dill pickles if you like.
To complete the dish, roll and serve:
- Fold the sides of the flatbread over the fillings and then roll it up tightly, similar to a burrito.
- Serve your homemade German Doner Kebab immediately, either whole or sliced into smaller portions. Finally, enjoy!
