Hainanese Chicken Rice is a delicious and popular dish originating from Hainan, China, but it has become a favorite in many Southeast Asian countries like Singapore and Malaysia
Ingredients:
- 1 whole chicken (about 3-4 pounds)
- 1 thumb-sized piece of ginger, peeled and sliced
- 4-5 garlic cloves, crushed

- 2 cups of jasmine rice
- 3 cups of chicken broth (from cooking the chicken)

Instructions:
- Firstly, clean and rinse the whole chicken, both inside and out. Pat it dry with paper towels.
- In a large pot, bring enough water to cover the chicken to a boil. Additionally, add the ginger, garlic, green onions, and salt. Subsequently, place the whole chicken in the pot, breast side down. Lower the heat to a simmer and poach the chicken for about 40-50 minutes or until fully cooked. To check if the chicken is cooked, insert a chopstick or skewer into the thickest part of the chicken thigh; if the juices run clear, it’s done. Remove the chicken from the pot and let it cool. Additionally, keep the chicken broth for later use.
- In a separate pot or rice cooker, heat the vegetable oil over medium heat. Next, add the minced garlic and ginger, and sauté until fragrant, being careful not to burn them.
- Furthermore, add the jasmine rice to the pot and stir to coat the rice with the oil and aromatics.
- Measure 3 cups of the reserved chicken broth and add it to the rice. Additionally, add salt to taste. Bring it to a boil, then reduce the heat to low, cover, and let the rice simmer until fully cooked and all the liquid is absorbed (about 15-20 minutes).
- While the rice is cooking, you can prepare the condiments. Consequently, slice the cucumber and set it aside, and wash the cilantro leaves.
- Once the chicken has cooled, rub a little sesame oil over the skin to give it a glossy finish.
