Ingredients:
- 2 cups long-grain parboiled rice (or any rice of your choice)
- 1/4 cup vegetable oil or palm oil
- 1 large onion, finely chopped
- 2-3 cloves of garlic, minced
- 1-2 teaspoons grated ginger
- 2-3 ripe tomatoes, blended or finely chopped
- 1 red bell pepper, blended or finely chopped
- 1 green bell pepper, blended or finely chopped
- 1 scotch bonnet pepper (or any hot pepper of your choice), blended or finely chopped (adjust the amount according to your spice preference)
- 2 cups chicken or vegetable broth (or water)
- 1 tablespoon tomato paste
- 1 teaspoon ground cayenne pepper (optional, for extra heat)
- 1 teaspoon smoked paprika
- 1 teaspoon thyme
- 1 teaspoon curry powder
- 1 bay leaf
- Salt and pepper to taste
- 1 cup mixed vegetables (carrots, peas, green beans, etc.)
- Optional: Cooked chicken, beef, or shrimp for added protein
Instructions:
- Rinse the rice in cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.
- In a large pot or saucepan, heat the oil over medium heat. Add the chopped onions and sauté until they become translucent.
- Stir in the minced garlic and grated ginger and cook for an additional minute until fragrant.
- Add the blended or finely chopped tomatoes, red and green bell peppers, and scotch bonnet pepper. Cook the mixture for about 5-7 minutes, stirring occasionally until the liquid has reduced, and the sauce has thickened.
- Stir in the tomato paste, cayenne pepper (if using), smoked paprika, thyme, curry powder, bay leaf, salt, and pepper. Let it cook for another 3-5 minutes to meld the flavors.
- Pour in the chicken or vegetable broth (or water) and bring the mixture to a boil. Taste and adjust the seasoning if needed.
- Add the soaked and drained rice to the pot, spreading it out evenly. Gently stir the rice into the sauce, making sure all the grains are coated.
- Reduce the heat to low, cover the pot with a tight-fitting lid, and let the rice simmer for about 20-25 minutes, or until the rice is cooked and all the liquid is absorbed. Avoid stirring the rice while it’s cooking to prevent it from becoming mushy.
- During the last 5 minutes of cooking, add the mixed vegetables (and cooked chicken, beef, or shrimp if using) to the pot. Cover and let them steam together with the rice.
- Once the rice is fully cooked and the vegetables are tender, fluff the rice with a fork, and it’s ready to serve.
