Kanelbullar, also known as Swedish cinnamon buns, are delicious and popular pastries with a sweet cinnamon filling.
Ingredients:
Dough:
- 500g all-purpose flour
- 100g unsalted butter, softened
- 250ml milk, lukewarm
- 75g granulated sugar
- 1 packet (7g) active dry yeast
- 1/2 teaspoon salt
- 1 teaspoon ground cardamom (optional)
Filling:
- 100g unsalted butter, softened
- 75g granulated sugar
- 2 tablespoons ground cinnamon
Glaze:
- 1 egg, lightly beaten
- Pearl sugar (optional) for topping
Instructions:
Activate the yeast:
In a small bowl, mix the lukewarm milk and a pinch of sugar. Sprinkle the yeast on top and let it sit for about 5-10 minutes until it becomes frothy.
Prepare the dough:
In a large mixing bowl, combine the flour, sugar, salt, and ground cardamom (if using). Add the softened butter and the activated yeast mixture. Mix everything until a soft dough forms.
Knead the dough:
Transfer the dough to a floured surface and knead it for about 5-7 minutes, or until it becomes smooth and elastic.
First rise:
Place the dough back into the mixing bowl, cover it with a clean kitchen towel, and let it rise in a warm, draft-free place for about 1 hour or until it has doubled in size.
Prepare the filling:
While the dough is rising, mix the softened butter, sugar, and ground cinnamon in a bowl until well combined.
Roll out the dough:
Once the dough has doubled in size, punch it down to release the air. Roll it out on a floured surface into a large rectangle, about 0.5cm thick.
Spread the filling:
Evenly spread the cinnamon filling over the entire surface of the rolled-out dough.
Shape the buns:
Starting from one of the longer edges, roll the dough into a tight log. Cut the log into about 15-18 equal pieces.
Second rise:
Place the cinnamon bun pieces on a baking tray lined with parchment paper, leaving some space between each bun. Cover the tray with a kitchen towel and let the buns rise for another 30 minutes.
Preheat the oven: Meanwhile, preheat your oven to 200°C (390°F).
Brush with egg wash:
After the second rise, lightly brush the buns with the beaten egg. This will give them a nice golden color after baking. Optionally, you can sprinkle some pearl sugar on top for added sweetness and crunch.
Bake the Kanelbullar:
Place the buns in the preheated oven and bake for about 10-12 minutes or until they turn golden brown.
Cool and enjoy: Once baked, let the Kanelbullar cool on a wire rack before serving. They are best enjoyed fresh and warm with a cup of coffee or tea.
