Manti are a type of dumpling found in Turkish and Central Asian cuisines. They are typically filled with a mixture of ground meat, spices, and sometimes vegetables, and then boiled or steamed.
Ingredients:
Dough:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup water
Filling:
- 1/2 pound ground beef or lamb (you can also use a combination of both)
- 1 small onion, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika (optional)
- 1/4 teaspoon cayenne pepper (optional)
- 1/4 cup finely chopped fresh parsley
Sauce:
- 1 cup plain yogurt
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 tablespoon red pepper flakes (adjust to your spice preference)
- 1/4 cup water
- Salt to taste
Instructions:
1. Prepare the dough:
- In a mixing bowl, combine the flour and salt.
- In a separate bowl, beat the egg and water together.
- Slowly add the wet mixture to the dry mixture, stirring continuously, until a dough forms.
- Knead the dough on a floured surface for about 5-10 minutes until it becomes smooth.
- Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
2. Prepare the filling:
- In a mixing bowl, combine the ground meat, chopped onion, salt, black pepper, paprika (if using), cayenne pepper (if using), and chopped parsley.
- Mix everything well until the filling is thoroughly combined.
3. Roll out the dough:
- Roll out the rested dough on a floured surface until it’s about 1/16-inch thick.
- Cut the dough into small squares, approximately 1.5 inches by 1.5 inches.
4. Fill the manti:
- Place a small amount of the filling in the center of each dough square.
- Fold the dough over the filling to form a triangle, and then pinch the edges to seal the manti.
5. Cook the manti:
- Bring a large pot of salted water to a boil.
- Add the manti to the boiling water and cook until they float to the surface, which should take about 5-7 minutes.
- Remove the cooked manti with a slotted spoon and drain them.
6. Prepare the sauce:
- In a small saucepan, melt the butter over low heat.
- Add the minced garlic and red pepper flakes. Cook for a minute or two until fragrant.
- Stir in the water and a pinch of salt. Simmer for a couple of minutes.
- Remove from heat and stir in the yogurt.
7. Serve:
- Serve the manti hot, drizzled with the yogurt sauce.
Manti can be served with additional toppings like dried mint, sumac, and extra red pepper flakes for added flavor. Enjoy your homemade manti!
