Moi Moi: A delightful Nigerian dish made from ground beans, spiced vegetables, and a blend of aromatic seasonings. This recipe features a mouthwatering texture and optional slices of hard-boiled eggs for added indulgence. Enjoy the flavors of West Africa in every bite!
Ingredients:
- Firstly, 2 cups peeled and ground beans
- Next, 1 medium-sized onion, finely chopped
- Also, 2 red bell peppers (tatashe), chopped
- Additionally, 2-3 Scotch bonnet peppers (atarodo), chopped (adjust to your spice preference)
- Moreover, 1 cup vegetable oil
- Furthermore, 1 tablespoon ground crayfish (make sure it’s halal)
- Similarly, 1 teaspoon ground nutmeg
- Likewise, 1 teaspoon ground cumin
- Equally important, 2 teaspoons ground paprika
- Another key point, 1 teaspoon ground white pepper
- Additionally, 1 teaspoon salt (or to taste)
- Finally, 4 hard-boiled eggs, peeled and sliced (optional)
Instructions:
Firstly, in a large bowl, combine the peeled and ground beans with water. Stir well and leave to soak for about 30 minutes. Next, after soaking, rinse the beans thoroughly and use a blender or food processor to blend the beans into a smooth paste. You may need to add a little water while blending to achieve the right consistency.
Next, in a separate bowl, mix the chopped onions, red bell peppers, and Scotch bonnet peppers. Then, heat the vegetable oil in a frying pan and sauté the mixed vegetables until softened.
Add the ground crayfish, nutmeg, cumin, paprika, white pepper, and salt to the sautéed vegetables. Mix well and cook for another minute to release the flavors.
Now, combine the spiced vegetable mixture with the blended beans in the large bowl. Mix thoroughly until well incorporated.
Preheat your oven to 350°F (175°C).
Prepare either aluminum foil cups or heatproof containers and pour the Moi Moi mixture into them, leaving some room for expansion.
If using hard-boiled eggs, place a few slices in each cup or container, pressing them slightly into the Moi Moi mixture.
Cover each cup or container with aluminum foil.
Place the cups or containers in a baking dish filled with water, creating a water bath. The water should reach about halfway up the sides of the cups or containers.
Carefully place the baking dish in the preheated oven and bake for about 45 minutes to 1 hour or until the Moi Moi is set and firm to the touch.
Once the Moi Moi is cooked, remove it from the oven and let it cool slightly before serving.
