Mutton Karahi is a flavorful and aromatic Pakistani dish made with tender pieces of mutton cooked in a rich and spicy tomato-based gravy. It is traditionally prepared in a karahi, a type of wok, and is garnished with fresh coriander and ginger, adding a burst of freshness to the dish.
Ingredients for Mutton Karahi:
- 500 grams mutton, cut into pieces
- 4 tablespoons vegetable oil
- 2 medium onions, finely chopped
- 2 tomatoes, finely chopped
- 2 tablespoons ginger-garlic paste
- 2 green chilies, sliced
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala powder
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
- Ginger slices (for garnish)
- Lemon wedges (for serving)
Instructions for Mutton Karahi:
- Firstly, heat the vegetable oil in a large, heavy-bottomed pan or karahi over medium heat.
- Next, add the finely chopped onions and sauté them until they turn golden brown.
- Then, incorporate the ginger-garlic paste and green chilies to the pan. Cook for 1-2 minutes, stirring continuously.
- After that, add the mutton pieces to the pan and cook on high heat until they are browned on all sides.
- Reduce the heat to low and add the finely chopped tomatoes. Cook for a few minutes until the tomatoes are softened.
- Next, add the red chili powder, turmeric powder, cumin powder, coriander powder, and salt. Mix well to coat the mutton pieces with the spices.
- Cover the pan and let the mutton cook on low heat for about 1 hour or until it becomes tender. You can also use a pressure cooker to speed up the cooking process.
- Once the mutton is tender and the oil starts to separate from the gravy, increase the heat to medium-high and cook uncovered for a few minutes to thicken the gravy.
- Sprinkle the garam masala powder over the mutton karahi and mix well.
- Finally, garnish with freshly chopped coriander leaves and ginger slices.
- Serve hot with naan bread or rice, accompanied by lemon wedges on the side.
