A tasty pasta salad recipe with chicken:
Ingredients:
- 8 ounces (225g) rotini or fusilli pasta
- 2 boneless, skinless chicken breasts
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup black olives, sliced
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup Italian dressing (store-bought or homemade)
- Salt and pepper to taste
- Olive oil for cooking

- Cook the pasta according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside to cool.

- Taste and season with additional salt and pepper if needed.

- Refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld together.
