Ingredients:
- 4 bone-in, skin-on chicken thighs (you can also use chicken breasts or drumsticks)
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 4 garlic cloves, minced
- 2 teaspoons smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon chili powder (adjust for desired spiciness)
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 1-2 fresh red chili peppers (like bird’s eye chili or any hot chili pepper), finely chopped (adjust for desired spiciness)
- 1/4 cup fresh parsley or cilantro, chopped (for garnish)
- Lemon wedges (for serving)
Instructions:
- In a bowl, combine the olive oil, lemon juice, minced garlic, smoked paprika, dried oregano, ground cumin, chili powder, salt, and black pepper to create the Piri Piri marinade.
- Using a sharp knife, make a few deep slits in each chicken piece to allow the marinade to penetrate the meat.
- Rub the Piri Piri marinade all over the chicken, ensuring it gets into the slits you made. Cover the chicken and marinate it in the refrigerator for at least 1 hour, or ideally overnight for maximum flavor.
- Preheat your grill or barbecue to medium-high heat. You can also use an oven preheated to 425°F (220°C) and cook the chicken on a baking sheet.
- If grilling, lightly oil the grill grates to prevent sticking. Place the marinated chicken on the grill and cook for about 5-7 minutes on each side or until the chicken is cooked through and has grill marks. Cooking times may vary depending on the thickness of the chicken pieces.
- If using an oven, place the marinated chicken on a baking sheet lined with parchment paper or aluminum foil. Bake for approximately 25-30 minutes or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
- Once the chicken is done, remove it from the heat source and let it rest for a few minutes.
- Sprinkle the chopped fresh chili peppers and parsley or cilantro over the cooked chicken for an extra kick of flavor and a pop of color.
- Serve the Piri Piri chicken with lemon wedges on the side for squeezing over the chicken before eating.
