Ingredients:
For the chicken marinade:
- 1 pound (450g) boneless, skinless chicken breasts or thighs, cut into thin strips
- In a large bowl, combine the soy sauce, vegetable oil, fish sauce (optional), brown sugar, minced garlic, ground coriander, ground cumin, turmeric powder, and ground ginger or fresh grated ginger.
- Add the chicken strips to the marinade and toss them to coat evenly. Cover the bowl and refrigerate for at least 1-2 hours (or ideally overnight) to allow the flavors to meld.
For the peanut sauce:
- In a saucepan over low heat, combine the unsweetened peanut butter, coconut milk, soy sauce, lime juice, brown sugar, chili paste (or sriracha), and minced garlic.
- Continuously stir the sauce until it becomes smooth and heated through. If the sauce is too thick, add a little water at a time to reach your desired consistency.
- Remove the sauce from the heat and set it aside.
Optional garnish:
- Chopped peanuts, fresh cilantro leaves, and sliced cucumber and red onion can be used as optional garnish.
Instructions:
- Once the chicken has marinated, thread the chicken strips onto the pre-soaked bamboo skewers.
- Preheat the grill or a grill pan to medium-high heat and brush the grates with a little oil to prevent sticking.
- Grill the chicken skewers for about 2-3 minutes on each side or until they are cooked through and slightly charred.
- Carefully remove the skewers from the grill and arrange them on a serving platter.
- Serve the chicken satay with the peanut sauce on the side and garnish it with chopped peanuts, fresh cilantro leaves, and sliced cucumber and red onion if desired.
