Savor the taste of summer with Spanish Gazpacho, a refreshing cold soup made from ripe tomatoes, cucumber, and bell pepper, blended to perfection with olive oil and red wine vinegar. This classic recipe brings a burst of Mediterranean flavors to your table, perfect for beating the heat on hot days
Ingredients:
- 1 kg ripe tomatoes, chopped
- 1 cucumber, peeled and chopped
- 1 red bell pepper, chopped
- 1 small red onion, chopped
- 2-3 garlic cloves, minced
- 4-5 tablespoons extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 500 ml cold water
- 1-2 slices of stale bread, crust removed (optional, for thickness)
- Salt and pepper to taste
For garnish (optional):
- Cucumber slices
- Tomato chunks
- Red onion rings
- Bell pepper strips
- Fresh basil or parsley leaves
Instructions:
- Start by preparing all the vegetables. Wash the tomatoes, cucumber, and bell pepper. Peel the cucumber, and chop them all into rough pieces. Also, chop the red onion and mince the garlic cloves.
- If using stale bread, soak it in water for a few minutes to soften. Squeeze out the excess water before adding it to the soup.
- In a blender or food processor, combine the chopped tomatoes, cucumber, red bell pepper, red onion, garlic, and soaked bread (if using). Blend until you get a smooth puree.
- Slowly drizzle in the olive oil while blending to emulsify the soup and give it a smooth texture.
- Add the red wine vinegar and blend again to incorporate.
- Pour in the cold water and blend until the mixture is well combined. If the soup seems too thick, you can add more water to reach your desired consistency.
- Season the gazpacho with salt and pepper to taste. Remember that chilling the soup will slightly mute the flavors, so you can adjust the seasoning accordingly.
- Transfer the gazpacho to a large bowl or container and cover it. Refrigerate the soup for at least 2 hours before serving to allow the flavors to meld and for the soup to become nicely chilled.
- Before serving, check the seasoning once more and adjust if necessary. Ladle the gazpacho into bowls or glasses.
