Ingredients:
- 2 tbsp vegetable oil
- 2 tbsp green curry paste

- 1 cup mixed vegetables
- 2 tbsp fish sauce (or soy sauce for vegetarian option)
- 1 tbsp palm sugar or brown sugar
- 4-5 kaffir lime leaves (if available)
- 1 red chili pepper (sliced, optional)
- Fresh Thai basil leaves (for garnish, optional)
- Cooked jasmine rice (to serve)
For the Green Curry Paste:
- 3-5 green Thai chilies (adjust for spiciness)
- 2 shallots, chopped
- 3 cloves garlic, minced
- 1 stalk lemongrass (white part only), thinly sliced
- 1 thumb-sized piece of galangal or ginger, chopped
- 1 tbsp coriander seeds
- 1/2 tsp cumin seeds
- 1/2 tsp white peppercorns
- 1/2 tsp shrimp paste (or miso paste for vegetarian option)
- 1 tbsp vegetable oil
Instructions:
- If making the green curry paste from scratch, grind all the paste ingredients in a mortar and pestle or food processor until smooth.
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the green curry paste and stir-fry for a minute until fragrant.
- Pour in the coconut milk and chicken or vegetable broth. Stir and bring it to a gentle boil.
- Add the sliced chicken or tofu to the pan and cook until almost done.
- Add the mixed vegetables, fish sauce (or soy sauce), palm sugar, and kaffir lime leaves. Continue cooking until the vegetables are tender and the chicken is fully cooked (if using chicken).
- Taste the curry and adjust the seasoning as needed. Add more fish sauce or sugar if desired.
- Once everything is cooked and the flavors have melded together, remove the curry from the heat.
- Serve the Thai Green Curry over jasmine rice. Garnish with sliced red chili pepper and fresh Thai basil leaves for extra color and flavor.
