Ingredients:
- 2 cups cooked rice (preferably leftover rice)
- 1 cup mixed vegetables (carrots, peas, corn, bell peppers, etc.), diced
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil (optional)
- Salt and pepper to taste
- 2 eggs, beaten (optional)
- Spring onions (scallions), chopped for garnish (optional)
Instructions:
- Heat the vegetable oil in a large pan or wok over medium-high heat.
- Add the chopped onion and minced garlic to the pan and sauté until they become translucent.
- If using eggs, push the onion and garlic to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until they are fully cooked.
- Add the mixed vegetables to the pan and stir-fry for a few minutes until they are slightly tender.
- Add the cooked rice to the pan and stir well to combine with the vegetables. Break up any clumps of rice with a spatula.
- Drizzle the soy sauce and sesame oil (if using) over the rice and vegetables. Stir to distribute the flavors evenly.
- Season with salt and pepper to taste. Adjust the amount of soy sauce or salt based on your preference.
- Continue cooking for a few more minutes, stirring occasionally, until the fried rice is heated through.
- Remove from heat and garnish with chopped spring onions if desired.
- Serve hot as a delicious main dish or side dish.
